Nattokinase is an extracellular serine protease enzyme originally extracted from the traditional Japanese fermented soybean food called nattō. It is produced by the bacterium Bacillus subtilis var. natto during the fermentation process. Despite its name, it is not a kinase enzyme but rather a member of the subtilisin family, widely studied and used as a dietary supplement for its fibrinolytic (blood-clot dissolving) properties.
